Ingredients:
4 cups of flour
2 cups of water used from boiling potatoes (for filling)
1/8 cup whipping cream
1/8 cup of light olive oil
Slowly combine everything until it is well combined.
Set aside to rest while you make the filling.
Once the pierogi are formed, place them into boiling water and remove them when they rise to the top.
Potato and Cheese Filling:
3 pounds of potatoes
1/2 cup of butter
1 onion diced
2 cups of cheddar cheese grated
salt and pepper to taste
Peel, boil, and mash potatoes.
Add butter to the pan and saute onions.
Mix into the mashed potatoes while adding cheese and salt, and pepper.
Use as a filling for the pierogi dough recipe and enjoy.
Ingredients:
2 tablespoons dried thyme
1 tablespoon salt
1 tablespoon rubbed sage
1/4 tablespoon ground allspice
1/4 tablespoon pepper
1 (4-5 lb) rolled boneless pork loin roast
orange-dijon sauce
Combine the first 5 ingredients, and rub the mixture evenly over the roast.
Place roast in a lightly greased 13x9-inch pan.
Bake at 325 degrees Fahrenheit for 1 hour, cover and bake for 30 minutes, and top with orange dijon sauce.
Orange Dijon Sauce
2 (12 oz) jars of orange marmalade
1/4 cup Worcestershire sauce
1 teaspoon ground ginger
4 large garlic cloves, minced
Bring all ingredients to a boil in a small saucepan over medium heat.
Serve with pork loin, and enjoy.
Ingredients:
2 cups uncooked elbow noodles
1 3/4 cup milk
1/8 cup butter
1/8 cup of flour
1-2 cloves of garlic
1/4 teaspoon salt and pepper
1/4 teaspoon ground mustard
dash of Worcestershire sauce
1 oz of mozzarella cheese
4 oz of Velveeta cheese
2 tablespoons of parmesan cheese
Bring a pot of water to a boil for the noodles.
On medium-low heat, melt butter and garlic in a medium saucepan.
Mix flour, salt, pepper, and ground mustard together. A thick paste will form and stir for a couple of seconds.
Mix Worcestershire sauce into milk. Using a whisk, stir milk into the paste.
Clumps will form when combining the mixtures, so just continue to stir until the clumps dissolve.
Stir the flour mixture until it thickens, which may take between 5 and 10 minutes, and bubbles form.
Add chopped cheese and stir on low heat until all cheese is melted.
Combine the sauce with the drained noodles, and enjoy.
Ingredients:
1 lb lean ground turkey
1 medium purple onion
1 teaspoon cumin powder
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
salt and pepper to taste
15 oz drained and rinsed black beans
15 oz pinto beans with juice
15 oz of white beans with juice
2-4 oz of diced jalapenos or green chilis
15 oz can of diced tomatoes
15 oz can of corn
30-33 oz of tomato sauce
In a large pan over medium-high heat, add 1 tablespoon olive oil and sautee 1 lb ground turkey until cooked through.
Add the onion along with cumin, chili, garlic, oregano powder, salt, and pepper.
Saute until onions are translucent and meat is slightly browned, then transfer to a crock pot.
Add black beans, pinto beans, white beans, jalapenos, diced tomatoes, and corn.
Add tomato sauce and stir to combine. Set on low for 3-4 hours until hot. Taste to adjust seasoning.
Enjoy with tortilla chips, shredded cheese, sour cream and enjoy.
